Apple Cider Braised Pork Roast Recipe

by Kendriyana Wilson

Recipe Ingredients

  • 4 lb pork shoulder roast or boston butt roast
  • 2 tbsp oil (I use avocado oil)
  • 2 cups fresh apple cider
  • 2 cups chicken broth
  • 2 tbsp dijon mustard
  • 1 head garlic
  • 3 rosemary sprigs
  • 4 thyme sprigs
  • 1 thinly sliced red onion
  • 2 honeycrisp apples, peels and cut into wedges
  • Salt
  • Pepper

          Recipe Directions

          1. Preheat an oven to 325 F.
          2. Start by trimming the pork of excess fat. Cut the pork into 4 large pieces.
          3. Pat the pork pieces dry with a paper towel and season well with salt and pepper.
          4. Heat the oil in a large stockpot over medium-high heat. Once the oil is hot, arrange the pork in a single layer. Sear for 4-5 minutes per side until the pork is deeply browned. Repeat on all sides.
          5. While the pork is searing, whisk together the cider, broth and dijon mustard together and set aside. Use kitchen twine to tie the rosemary and thyme together in a small bundle.
