by Chef Carlos

Recipe Ingredients

  • 1 tuna steak
For the Marinade:
  • ½ teaspoon of wasabi or wasabi paste
  • 1 tablespoon of soy sauce
  • ½ teaspoon of fresh ginger, finely chopped
  • 1 teaspoon of capers, finely chopped
  • ½ teaspoon of lemon juice
  • 1 drop (literally!) of sesame oil
For the Salad:
  • 2 tomatoes
  • ½ red bell pepper
  • ½ green bell pepper
  • ½ cucumber
  • ¼ red onion
  • Salt, to taste
  • Extra virgin olive oil (EVOO)
  • Red wine vinegar, to taste

          Recipe Directions

          1. Pound all marinade ingredients in a mortar until it forms a paste.
          2. Thoroughly pat dry the tuna steak and brush all sides with the marinade.
          3. Vacuum seal and refrigerate for 2 hours. If you don’t have a vacuum sealer, place the tuna in a Ziploc bag and refrigerate overnight.
          4. Remove the marinated tuna steak from the bag and pat dry any excess moisture.
          5. Heat your Flavortown Laser Titanium pan to maximum heat.
          6. Add avocado oil or vegetable oil (NOT EVOO).
          7. Sear each side of the tuna steak for 20-30 seconds until golden brown or even charred.
          8. Dice all salad ingredients. Dress with EVOO, salt, and red wine vinegar.
          9. Arrange the salad on a plate as a bed and place the tataki slices on top.
