Recipe Ingredients
Jerk Chicken
- 2 boneless, skinless chicken thighs
- 2 tsp all-purpose seasoning
- 1 tsp salt
- 1 tsp black pepper
- 2 tsp Caribbean green seasoning
- 3 tsp jerk marinade
Rasta Pasta Sauce
- ¼ cup onion, diced
- 1 tsp minced garlic
- ¼ each red, yellow, and green bell pepper, sliced
- 1 cup heavy cream
- 1 tsp all-purpose seasoning
- ½ tsp Cajun seasoning
- 1 tsp jerk marinade
- Salt and black pepper, to taste
- 3 cups cooked pasta
- ½ cup shredded Parmesan cheese
- Fresh cilantro and parsley, chopped (for garnish)
Recipe Directions
1. Marinate the Chicken:
- Season the chicken thighs with all-purpose seasoning, salt, black pepper, Caribbean green seasoning, and jerk marinade.
- Marinate overnight for best results.
- Pan-fry chicken until it reaches an internal temperature of 165°F. Cut into strips once cooked.
2. Make the Sauce:
- Sauté onions, garlic, and bell peppers in a pan until softened.
- Add heavy cream and let the sauce thicken. Season with all-purpose seasoning, Cajun seasoning, jerk marinade, salt, and black pepper.
3. Combine:
- Add cooked pasta and sliced jerk chicken to the sauce. Stir in Parmesan cheese.
- Garnish with fresh chopped cilantro and parsley. Enjoy!
