Recipe Ingredients

Jerk Chicken

  • 2 boneless, skinless chicken thighs
  • 2 tsp all-purpose seasoning
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tsp Caribbean green seasoning
  • 3 tsp jerk marinade

Rasta Pasta Sauce

  • ¼ cup onion, diced
  • 1 tsp minced garlic
  • ¼ each red, yellow, and green bell pepper, sliced
  • 1 cup heavy cream
  • 1 tsp all-purpose seasoning
  • ½ tsp Cajun seasoning
  • 1 tsp jerk marinade
  • Salt and black pepper, to taste
  • 3 cups cooked pasta
  • ½ cup shredded Parmesan cheese
  • Fresh cilantro and parsley, chopped (for garnish)

    Recipe Directions

    1. Marinate the Chicken:

    • Season the chicken thighs with all-purpose seasoning, salt, black pepper, Caribbean green seasoning, and jerk marinade.
    • Marinate overnight for best results.
    • Pan-fry chicken until it reaches an internal temperature of 165°F. Cut into strips once cooked.

    2. Make the Sauce:

    • Sauté onions, garlic, and bell peppers in a pan until softened.
    • Add heavy cream and let the sauce thicken. Season with all-purpose seasoning, Cajun seasoning, jerk marinade, salt, and black pepper.

    3. Combine:

    • Add cooked pasta and sliced jerk chicken to the sauce. Stir in Parmesan cheese.
    • Garnish with fresh chopped cilantro and parsley. Enjoy!
