Roasted Tomato and Basil Soup Recipe

Recipe Ingredients

  • 12 Roma tomatoes
  • 2 sweet onions
  • 2 bulbs of garlic
  • Olive oil
  • Salt, pepper, and smoked paprika to taste
  • Handful (or 1 cup) of fresh basil
  • 2 cups of chicken broth
  • 1 tbsp tomato paste
  • ½ cup (or a whole cup for an extra creamy consistency) heavy whipping cream

        Recipe Directions

        1. Turn oven to 400 degrees
        2. Line a baking sheet with foil
        3. Halve the tomatoes and transfer to the baking sheet
        4. Cut the onions in large chunks and mix with tomatoes on baking sheet
        5. Cut the tops off the bulbs of garlic and add to baking sheet
        6. Pour plenty of olive oil over the tomatoes, onions, and garlic
        7. Add salt, pepper, and smoked paprika
        8. Roast in the oven for about one hour
        9. After removing from the oven, you can add them straight to the pot and use an immersion blender to blend until smooth, or you can transfer them to an actual blender.
        10. Add in basil and blend. If you blended in a blender, transfer to the pot.
        11. Turn the burner on medium and add chicken broth and whisk to combine.
        12. Add tomato paste and whisk again until smooth.
        13. Add heavy whipping cream and whisk until well combined
        14. Simmer for about 10 minutes
        15. Serve with grilled cheese
