Two large smoked turkey wings. Remove the flappers and split the drum from the flat.
4 cups turkey or chicken stock.
½ if a medium onion sliced.
1 cup sliced bell pepper (Any color you prefer).
1 medium jalapeno sliced thin. (Optional)
¼ cup AP flour.
2 tablespoons butter.
1 tablespoon olive oil.
1 tablespoon Cajun seasoning.
1 teaspoon salt.
Recipe Directions
Add olive oil to your pan on medium heat.
Add the turkey wings to the pan and sear them for 5 minutes, skin side down.
Remove the wings and place them in the large sauté pan.
Back to the frying pan add the onions, peppers, jalapenos and sauté for 3-5 minutes.
Add the butter and Cajun seasoning in.
Once the butter is melted, mix in the flour and cook for an additional 1-2 minutes.
Whisk in 2 cups of the turkey stock until the mix thickens.
Pour the mix over the turkey wings on the large sauté pan.
Cover the large sauté pan with a lid and place in a 350F oven for at least an hour. (The longer the wings are in the braise, the more tender they will get).
Remove the sauté pan from the oven.
Serve wings over rice or mashed potatoes, make sure you pour plenty of the gravy over the wings.
