Swiss Chard and Blue Cheese Frittata Recipe

Recipe Ingredients
- 1 shallot diced
- 1 tablespoon olive oil
- 2 tbsp butter
- 4 cups Swiss chard or rainbow chard leaves
- 6 eggs
- 1/4 cup heavy cream
- pinch of salt
- fresh ground black pepper
- ½ cup sliced blue cheese or crumbled
Recipe Directions
- Heat the oil in you Flavortown Cookware frying pan over medium-high heat. Add the shallots and chard. Let sit for about 3 minutes before stirring to get a brown crust on the chard. Continue to saute for about 3 more minutes. Melt butter and sautee until butter slightly browns and gets nutty.
- Meanwhile, whisk the 6 eggs in a bowl with the heavy cream and a little salt and pepper. Pour over the top of the vegetables in the skillet and top with the cheese. Cook until the sides are set - about 5 minutes. Take the skillet off the burner and place into a 400 degree oven. Bake until the top is puffy and golden (keep you eye on it, this can go fast depending on your oven)
